Why do TV shows and encyclopedias take evolution as absolute fact?

i don't think they are talking about that kind of evolution. living things constantly evolve to meet their ever changing environment. for instance, the first humans lived under many different cirstances than we do today. we do not look the same or act the same as they did. we have evolved to fit the needs and cirstances of today's world. when they say things like "evolved millions of years ago" they are not talking about the creation of man but the way things change over time.
